Olive Oil - ελαιÏŒλαδο
Green Gold - Once a year we get together to harvest our olives from our yard.
Greece is known to be one of the bigest and finest producers of olive oil over the world. So we are proud to say that a very, very, very small part of it is produced at Spiti Koryfi. In our region everyone that has some piece of land have them filled with olive trees.

There is a lot that kan be said about olives and havervesting them to eat them or to convert them into oil but that would take us too far.
Just one thing to remeber: All olives start green and endup black if you let them ripe long enough.

From mid october to mid december most of the olives for oil production are harvested. Depending on the weather over the past year they will give you more or less oil. depending on the moment of harvesting they will give you different quality of oil.

Eraly harvesting gives you les acidule oils mosly seen as "extra virgin" oilive oil.
